Our Quality Assurance department is the cornerstone behind the solid reputation of our company.

Combining over 100 years of expertise in the culinary and food management fields, a Senior Director and his 3 Quality Assurance Supervisors ensure only the best arrives at our customers' sites.

Our Quality Control processes are available in Florida, New York, South America and in the summer Vancouver and Europe.

No new product is purchased before being tested and approved by our award-winning chefs. Each shipment of fresh, frozen or dry merchandise is personally inspected for quality, freshness and yield by one of our Quality Assurance Supervisors at either our warehouse or the local purveyors site.

Besides abiding by the Department of Agriculture's standards, we enforce our own internal requirements, comprising grades, marbling, dates of packing, proper freezing and packing procedures, etc.

Below are some of our most common standards in the food purchasing field:

  • Beef:
    • Purchased exclusively from one of the corn belt states.
    • Our "Midwest Top Choice" prime ribs, strip loins and top sirloins, are shipped fresh and aged in our aging rooms for 6 weeks (tenderloins are received fresh and aged for 2 weeks). If after 6 weeks the beef is not shipped to our customer, we use blast freezing to preserve its quality.
    • Every shipment is inspected for marbling and trimming to ensure proper maintenance of our standards.
  • Veal:
    • We purchase veal legs, racks and shoulders exclusively from only milk fed calves .
    • All veal is received vacuum packed and blast frozen.
  • Pork:
    • We currently purchase pork loins and pork legs.
    • All pork is received vacuum packed and frozen.
  • Lamb:
    • We purchase "American Top Choice" or "Prime" lamb legs and racks.
    • Our lamb arrives vacuum packed and frozen.
  • Poultry:
    • We purchase "Grade A" chickens, which must be received single-bagged, frozen and with less than 90 days from packing.
    • We purchase "Grade A" turkeys and ducks, which must be received single- bagged, frozen and with less than 6 months from packing.
  • Eggs:
    • We purchase "Grade A" eggs, which must be received fresh and with less than 7 days from packing.
  • Fish/Seafood:
    • We purchase filleted fish, which must be shatter packed or vacuum packed.
    • All seafood is stringently checked for freshness/yield.
  • Fresh Produce:
    • We purchase "Grade #1" fresh produce.
    • All fruits are checked for freshness, sweetness (sugar content) and shelf life.
